This souffle makes a great breakfast or snack. Its sweet and creamy but packed with nutrition, fibre and protein. It takes just 12 minutes in the microwave, though you could also bake it in the oven.

- 2 large Sweet potatoes, cooked, peeled and mashed
- 2 Scoops Stevia sweetened vanilla protein powder
- 1/2 Cup Egg whites
- 1 tsp Ground cinnamon
- 1/2 tsp salt
- 2 tsp Konjac powder
- Whisk together sweet potato puree with protein powder, eggs whites, stevia and salt. Add konjac powder and stir well. Scrape batter into greased oven/microwave safe dish. Sprinkle top with cinnamon, if desired. Microwave covered on high for 12 minutes, stopping and lifting lid every few minutes. Or bake in the oven until center is set. Serve warm or cold. Keep refrigerated for 3-4 days or freeze.
