Sweet Potato Brownies

If you are looking for a rich, fudgy brownie that is as good for you as it is delicious, than look no further. These are absolutely fantastic and guaranteed to be a hit with everyone. Just don't tell them that they are grain-free, gluten-free, sugar-free and vegan1


For:  16 Brownies
  • 15 ounce Can Pureed sweet potato
  • 1/2 Cup Vegan or whey chocolate protein powder, stevia sweetened
  • 1/2 Cup Vitafiber powder sweetener (or other IMO sweetener)
  • 1/2 Cup Cocoa powder
  • 1/4 Cup Almond flour
  • 1 tsp Pure vanilla extract
  • 1 tsp Baking soda
  • 2 tbsp Konjac powder


  1. Whisk together all the ingredients in a large bowl. Scrape batter into greased, square baking pan and bake at 350F for 16-18 minutes. Let cool and cut into squares. Keep refrigerated for up to 5 days or freeze.
