Wish you could eat chocolate pudding every day? Now you can! This recipe is low-calorie, low-fat and sugar-free. If you use soy or dairy milk you will also get a good hit of protein. Either way, this pudding will fill you up without filling you out and satisfies even the strongest chocolate cravings.
- 2 cups 1.5 cups Unsweetened vanilla, chocolate or plain non-dairy milk (or dairy) plus an additional 1.5 cups
- 1 cup Granular stevia, xylitol or erythritol
- 1 tsp Vanilla extract
- 1/4 cup Cocoa or raw cacao powder
- 2 tbsp Konjac powder
- Whisk together 2 cups milk, sweetener, vanilla and cocoa powder in a medium sized pot set over medium heat. When it starts to bubble, turn down to low. Whisk together remaining milk with konjac powder and pour quickly into pot. Turn off heat and whisk everything together until smooth and thickened. Remove from heat and pour into serving dish or individual serving dishes and refrigerate until cool. Keep refrigerated for up to 5 days.
