You won't believe these are grain free! They are so yummy. My favorite way to eat them is stuffed with turkey bacon (or vegan bacon) and peanut butter, but they are also great with maple syrup. I make the whole batch and then freeze them for a quick breakfast, lunch or dinner. Because who says pancakes can only be eaten for breakfast??
IngredientsFor: 8 Pancakes
- 2 Apples Cored, and quartered
- 2 Scoops Vanilla protein powder (vegan or whey)
- 1 Cup Egg Whites
- 1 tsp Pure vanilla extract
- 1 tsp Ground cinnamon
- 2 tsp Baking powder
- 1/4 Cup Konjac powder
- Throw all the ingredients into blender and blend. Let sit for 10 minutes to allow batter to thicken up. Pour batter onto hot, greased skillet and cook until cooked through and golden on both sides. Do not make them too big or they will be difficult to flip.
