Gobble Ghetti

My husband doesn't love zucchini, but he loves this recipe! I adore zucchini, but prefer it cooked to raw. This dish will have you forgetting all about high calorie, high carb pasta, its so delicious and satisfying. The konjac powder ensures the scrumptious sauce sticks to the zucchini noodles and keeps it thick and rich. Serve with parmesan cheese, for sprinkling, if desired.

Ingredients

For:  4 Servings
  • 1 lb Lean ground turkey (or chicken)
  • 1 Jar No sugar-added pasta sauce (or 2 cups homemade)
  • 2 Cloves Garlic, minced
  • 6 Zucchini Spiralized
  • 2 tbsp Red wine vinegar
  • 1/2 tsp Salt
  • 2-3 tsp Konjac powder
  • Crushed red pepper flakes, to taste (optional)

Instructions

  1. Toss spiralized zucchini with vinegar, konjac powder and salt and set aside in a colander. Brown meat in skillet, along with garlic and chili, if using. Pour in tomato sauce and simmer for about 5 minutes. Add in zucchini and toss together until heated through. Serve immediately. Keep leftovers refrigerated for up to 3 days.
