Gigantic Low-Cal Oatmeal Cookie

This oatmeal cookie is sweet, spicy, chewy and humongous. Thanks to the konjac powder, no eggs, oil, or butter is required to hold it together. In fact, its a pretty short ingredient list period! I have made these now several different ways. The basic recipe uses apple sauce but I have also made them with pear sauce, pureed persimmons, and pureed pineapple. Bananas would work too. Use certified gluten-free oats, if necessary. This recipe is naturally vegan!

Ingredients

For:  1 Cookie
  • 1 Cup Oats
  • 1/2 Cup Unsweetened apple sauce
  • 1 tsp Pure, uncut stevia powder (or other sweetener, to taste)
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 2 tsp Konjac powder

Instructions

  1. Mix together all ingredients well until fully combined. Press dough onto parchment-lined cookie sheet and flatten out into large circle. Bake at 350F for 10-12 minutes until golden. Cool, and ice if desired. Keep refrigerated up to 5 days or freeze.
