This oatmeal cookie is sweet, spicy, chewy and humongous. Thanks to the konjac powder, no eggs, oil, or butter is required to hold it together. In fact, its a pretty short ingredient list period! I have made these now several different ways. The basic recipe uses apple sauce but I have also made them with pear sauce, pureed persimmons, and pureed pineapple. Bananas would work too. Use certified gluten-free oats, if necessary. This recipe is naturally vegan!

- 1 Cup Oats
- 1/2 Cup Unsweetened apple sauce
- 1 tsp Pure, uncut stevia powder (or other sweetener, to taste)
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 1/2 tsp Baking soda
- 2 tsp Konjac powder
- Mix together all ingredients well until fully combined. Press dough onto parchment-lined cookie sheet and flatten out into large circle. Bake at 350F for 10-12 minutes until golden. Cool, and ice if desired. Keep refrigerated up to 5 days or freeze.
